Used with an angle guide AND placed at the exact same hight on the side of the knife each time when measuring, this stone can do wonders to an already sharp edge. Place 3 Micron Diamond Lapping Film on the Blank Glass Paten side to use after the 3000 grit stones. Refine with 1/0.5 Micron Diamond Emulsion and Leather Strops Pack and you can have a fast VERY sharp edge. (Just keep in mind that 3000 Grit Diamond Stones take 30 knives to break in),
Could not determine why my right-side Pivot Screw continued to come loose after thirty to forty strokes. Your Tech read my email and immediately sent me two new units. Works fine now. Don't ever remember a screw having a defective thread. Anyway, am back to sharpening all our knives. The more experience with the unit...the sharper the knives are now. My wife, a retired Professional German Chef, is even impressed!
The base is much sturdier and heavier than I imagined, but in a good way. The motions of the stones will take some getting used to, and how to set up the knife will take some practice. As long as you follow the videos, it's really easy to set it all up.
I was a little skeptical at first because I was imagining what happens when you strop too hard, rounding the edge. These don’t do that at all.
They also seem to takeout the possible angle errors that can occur when using the glass lapping film paddles. Or if you’re knife might be barely moving in the jaws…you know, the kind of things that can happen that will make or break a sharpening session if you’re striving for perfection.
If you’re looking to up your hair splitting obsession, I would definitely recommend buying these paddles. I’m honestly surprised how great the end result came out. Needless to say, I’m ordering a second set after I finish typing this.
