I have used several leading sharpening systems over the last 20+ years. My favorite is the WE 130 with diamond lapping film. It is the most convenient and produces the best edge in just a few minutes (once you learn how it work). My usual routine is to fix the factory edge on new knives. Once you own a WE you will never be impressed with the sharpness or evenness of a factory edge. After the factory edge has been corrected, re-sharpening is fast. Again on corrected knives I’ll start with the 800/1000 then move to the 1500/6mc Diamond and done. This will give me a near mirror polished edge that will shave and cleanly slice. The lapping film is so enjoyable to use I find myself continuing to .1mc for a full mirrored edge. I’ll never go back to leather and paste the lapping film is vastly superior. A note on cost. Try the aluminum Lapping film to see if you like the results. Then once you know you found sharpening nirvana go with the diamond film it lasts much longer and cuts much faster.
