How to Sharpen a Single Beveled Blade
A single bevel knife—also known as a chisel grind—is sharpened differently than a typical double-beveled blade. This article walks through how to sharpen single bevel knives using a Wicked Edge precision sharpener, along with key tips for identifying and using these blades effectively.
What Is a Single Bevel or Chisel Ground Blade?
Single bevel knives have a grind on only one side of the blade. The other side is flat or nearly flat. This type of edge is commonly found on traditional Japanese kitchen knives and some tactical knives, like those made by Emerson. The design allows for extremely fine, controlled cuts, especially through tough or delicate ingredients.
Sharpening a Single Bevel Knife with a Wicked Edge Sharpener
Step-by-Step Instructions
- Identify the beveled side. This is the only side you'll be sharpening. The other side remains flat.
- Find your angle and sweet spot. Use the Marker Method to set your angle on the beveled side.
- Create a burr. Use your diamond stones in grit progression to sharpen the bevel until you feel a burr form along the opposite edge.
- Refine the edge. Continue your sharpening progression until you reach your final finishing grit.
- Remove the burr. Use a strop or a fine diamond stone to lightly flatten the opposite side (the flat side of the blade) and remove the burr. Do this gently to avoid creating a secondary bevel.
Tips for Using and Identifying Chisel Ground Knives
- Most commonly found on Japanese kitchen knives, especially yanagiba and usuba styles.
- The beveled side should match your dominant hand:
- Right-handed users: bevel on the right side (facing you in use).
- Left-handed users: bevel on the left side.
- Brands like Emerson Knives produce tactical single bevel blades—check before sharpening to avoid unintended reprofiling.
Why Use a Single Bevel Blade?
This grind allows for extreme control in food prep and precision slicing. The asymmetric edge helps guide the blade through materials, making it ideal for:
- Cutting through hard vegetables like carrots
- Slicing delicate proteins like fish
- Precision carving tasks
They’re especially appreciated in culinary environments where clean, consistent cuts matter.
